What Makes Small-Batch Hot Sauce Different?

Small-batch hot sauce is made in limited runs, usually from a recipe built and tuned by one person, with real ingredients you can recognize on the label. Dragon Hot Sauce is hand-crafted in small batches in Florida from founder Ramie Deihl’s recipes, with fresh peppers and nothing artificial. Here’s what that actually means, and how to tell a good sauce from a good-looking label.

What does “small batch” mean for hot sauce?

Small batch means the sauce is made in limited runs rather than continuous factory production. It usually means a shorter ingredient list, more attention to each batch, and a recipe built around flavor instead of shelf price. There’s no official size that makes a batch “small,” though, so the phrase on a label is a promise, not a measurement. The ingredient list is where the promise gets kept or broken.

How did Dragon Hot Sauce start?

Ramie Deihl spent more than 25 years in the natural food industry, working with everyone from small health food stores to major retailers. In 2016 he started experimenting with homemade hot sauce and worked through 44 recipes, each one built on balance: flavor first, heat level just right. Caribbean Style Habanero was one of the very first, and the one he kept coming back to. It became a favorite with friends and family long before it had a label. Dragon Hot Sauce launched in 2025, and Fresh Serrano, the Green Dragon, joined the lineup in 2026.

Why does small batch change the flavor?

A recipe made in limited runs can be built around fresh ingredients instead of cheap fillers. Caribbean Style Habanero lists onions and tomatoes first, ahead of the fresh habanero peppers and fresh lime juice, so it tastes like food with heat in it rather than heat with a little food in it. Fresh Serrano keeps things lean on purpose: eight ingredients, led by serrano peppers and white vinegar, for a crisp, green-pepper bite.

What goes into a Dragon bottle?

Caribbean Style Habanero: onions, tomatoes (tomatoes, tomato juice, sea salt, whole leaf basil, citric acid), water, white vinegar, fresh habanero peppers, fresh lime juice, agave nectar, garlic, salt, mustard powder, paprika, red pepper flakes and xanthan gum.

Fresh Serrano: water, serrano peppers, white vinegar, sugar, salt, garlic, xanthan gum and citric acid.

Both are vegan, with nothing artificial, in 5 fl oz bottles. No pepper extracts, no artificial colors or flavors, nothing you’d need to look up.

Why does Dragon only make two sauces?

Out of 44 recipes, only two have made it into a bottle so far. That’s deliberate. Each Dragon has to earn its place by doing a job the other one doesn’t: Caribbean Style Habanero is the savory, hotter sauce for grilled meats, wings and pizza, and Fresh Serrano is the bright, milder sauce for eggs, fish and chicken. Two sauces done right beats a shelf full of almost-right ones.

Is small-batch hot sauce safe?

It should be. Commercially sold hot sauces made by adding acid to peppers are regulated by the FDA as acidified foods, whatever the size of the kitchen. The rules require the finished sauce to reach a pH of 4.6 or lower and stay there, which keeps harmful bacteria from growing. Dragon is an acidified food, which is also why it’s shelf stable for almost two years.

How do you spot a good small-batch hot sauce?

Read the ingredient list. U.S. labels list ingredients in descending order by weight, so the first few tell you what you’re mostly eating. Real food near the top, a short list overall, and nothing artificial are good signs. Then taste it on something simple, like eggs or a tortilla chip: a good sauce tastes like peppers and ingredients first, and heat second. If all you get is burn, the recipe was built for bragging rights, not dinner.

Frequently asked questions

Who makes Dragon Hot Sauce?

Dragon Hot Sauce is made from recipes by founder Ramie Deihl, who spent more than 25 years in the natural food industry before starting the brand. He began experimenting with hot sauce in 2016, developed 44 recipes, and launched Dragon in 2025. Every bottle is hand-crafted in small batches in Florida.

Are Dragon sauces made with fresh peppers?

Yes. Caribbean Style Habanero is made with fresh habanero peppers and fresh lime juice, along with onions, tomatoes and agave. Fresh Serrano is built on serrano peppers, white vinegar and garlic for a crisp, green-pepper flavor. Neither sauce uses pepper extracts or anything artificial to fake the heat.

How many ingredients are in Dragon Hot Sauce?

Fresh Serrano has eight ingredients: water, serrano peppers, white vinegar, sugar, salt, garlic, xanthan gum and citric acid. Caribbean Style Habanero has thirteen, led by onions and tomatoes, then water, white vinegar, fresh habanero peppers, fresh lime juice and agave nectar. Both lists are short enough to read in one breath, which is the point.

Why did Dragon start with a habanero sauce?

Caribbean Style Habanero was one of the very first of Ramie Deihl's 44 recipes, and it's the one he kept coming back to. It became a favorite with friends, family and peers long before launch, so when Dragon went to market in 2025, it was the natural first bottle.

Does small-batch hot sauce taste different from big brands?

Often, yes, because the recipe is built around flavor rather than cost. Many familiar hot sauces list vinegar or peppers first. Caribbean Style Habanero leads with onions and tomatoes, so it tastes savory and layered. The best test is your own: try a few dashes side by side on plain eggs.
